Place a small handful of mint leaves in a glass. Add some cubed, seedless watermelon (fill about ? of the glass). Add approximately 1 tablespoon of your sweetener of choice (e.g. simple syrup) then use a muddler to crush the ingredients. Fill the glass with crushed ice, add a tablespoon of lime then top up with sparkling water.

Put one cup of pear juice, a teaspoon of lime juice, ¾ cup of honey, ¼ cup of sugar (or your favourite sweetener), a sprig of fresh rosemary, a small knob of peeled and finely cut ginger and grated fresh nutmeg in a saucepan. Bring to the boil then allow to simmer for 5 minutes until the sugar is fully dissolved. Remove from heat, then once cooled strain the syrup into a small jug.
